A B O U T

Thyme is an herb which the ancient Greeks held thyme in high esteem - it grew in a place where honey hives were located, and it was thought to restore health. In times of Chivalry, ladies gave knights handkerchiefs embroidered with bees bearing a sprig of thyme, which was said to be a mark of courage. Thyme has also been associated with witches - a witch who acted in evil could cleanse her crimes wby bathing in waters steeped in the herb. Thyme was also thought to be specially flavored by faeries in ancient times.

In modern times, thyme is mainly used as a cooking herb - it has a pungent or lemony taste, and used mainly to flavor chicken, poultry and beef dishes. It flowers in the summer.
